Dear reader,

Essentially, kimchi is a staple Korean side dish that's present at almost every meal. It's fermented napa cabbage—or cucumber, mustard leaf, scallion, chive, radish... Some are spicier than others (⊙︿⊙✿). Usually, certain types are reserved for certain seasons, or dishes. The ingredients can also hint at which region a family is from in Korea.

Son-mat, which literally translates to hand taste, is something deeply embedded in Korean cooking. It's that unique touch and (ɔ◔‿◔)ɔ 💖 someone brings to cooking that makes their food taste so good, making you feel right at home.

I returned stateside in 2020 having survived two dark Stockholm winters—as in 14:45 sunsets. You can find "kimchi" on many menus there (Bleck, Landet, Ai Ramen, et al.). Some taste good, but, uh, some don't (◕︵◕), which made me homesick...er. I wondered why. Since being back home, I remembered that my aunt's kimchi is the best in the world. I wanted to learn her recipe, and make a website to shed light on son-mat to save humanity from bad kimchi and homesickness! (✿◠‿◠)*:・゚✧
